实验采用了总还原力、DPPH· 法、FRAP法3种抗氧化活性检测方法,检测了由0.2%不同的酸度调节剂处理后的杭白菊花浓缩水提液经过6天加速氧化后的抗氧化活性,模拟市售菊花茶饮于货架期的情况
摘 要:本论文通过对杭白菊浸提,将其浸提液用0.2%的不同酸味调节剂处理,65℃加速氧化6天后,以总还原力、DPPH·清除率、抗氧化能力(FRAP)为指标考查了各种酸味调节剂对杭白菊浸提液抗氧化活性的保护作用。实验结果表明,加入0.2%无水柠檬酸、富马酸一钠的杭白菊花水提液总还原力、DPPH·清除率、抗氧化能力(FRAP)均高于未加酸味调节剂的对照组。加入DL-苹果酸、L-苹果酸、乳酸、DL-酒石酸的杭白菊花水提液的总还原力下降比原液缓慢且总还原力强于原液,抗氧化活性得到保护;加入DL-苹果酸、葡萄糖酸钠、乳酸钠的杭白菊花水提液的DPPH·清除率下降比原液缓慢且清除率高于原液,抗氧化活性得到保护。三种方法综合评价结果显示,0.2%无水柠檬酸、富马酸一钠对杭白菊花水提液的抗氧化活性均有保护作用。上述实验结果可以为杭白菊饮料加工中保护产品抗氧化活性提供依据。
In this thesis, the extracts of Chrysanthemum morifolium were treated with different acidity regulators with 0.2% volume fraction and the antioxidant capacities were evaluated. The results showed that the total reducing power, DPPH· scavenging capacity and total antioxidant ability (FRAP) of the aqueous extracts pretreated with 0.2% citric acid anhydrous and monosodium fumarate were significantly higher than those of the controls 6 days after treatments under 65°C, which suggested that anhydrous and monosodium fumarate had protective effects on the antioxidant activity of C. morifolium extracts. The downward trend of the total reducing power of extracts adding DL-malic acid, L-malic acid, lactic acid and DL-tartaric acid was slower than that of the original solution and the total reducing power was stronger, so the antioxidant activity was protected; The downward trend of the DPPH· clearance rate of aqueous extracts of sodium chrysanthemum adding DL-malic acid, gluconic acid, and sodium lactate was slower than that of the original solution and the clearance rate was higher, so the antioxidant activity was protected. The comprehensive evaluation results of the three methods showed that 0.2% citric acid anhydrous and monosodium fumarate had protective effects on the antioxidant activity of aqueous extracts of Chrysanthemum morifolium, which can be used as the basis for beverage processing.

1. 引言
据悉,药经《本草便读》言:菊花具“治目祛风,益阴滋肾,平肝疏肺,清上焦之邪热” 的功效[1]。杭白菊(Chrysanthemum morifolium Ramat)含有黄酮类化合物[2]、绿原酸[3]、氨基酸等多种生物活性物质,这些生物活性物质具有抗氧化、降血脂等功能[4]。
菊花茶一直是大家喜爱的凉茶之一,在中国的华南和华东地区就一直有喝凉茶的习惯。罐装菊花茶饮料既方便携带,又能满足人们的功能要求[4]。
